What are the following uniform buttons for:
1. The Gebirgsjager anorak has a button on each upper sleeve.
2. The M40 Staubmantel has a pair of buttons on each side near the bottom of the coat.

this is just a guess but if the cuffs on this jcket have butten holes, then the buttons on the upper sleeves would be so that they stayed rolled up
in other words put you upper button through your cuff button hole

I'd imagine the buttons on the anorak upper sleeves were for coloured recognition armbands, like the reversible winter uniform jacket.

The M40's buttons might be to secure the coat shirts up to allow more freedom of movement when running (like French army overcoats)
The single button on the sleeve of the anorak does sound like an attachment point for the coloured armbands used on white camouflaged garments.

They were also used to attach zeltbahns to the anoraks as well.
