A bit large question, anyway...

1st Army: permanent
deployed along italo-french border as southern part of West Army Group at June 10, 1940, fights in the short french campaign of 20-25 June 1940.
Inactivated in fall 1940
Reactivated in February 1943 in Tunisia for trasformation of ACIT. Surrenders May 13, 1943 to allies forces

OOB 10/6/1940
II Corps: infantry divisions "Forlì","Acqui","Livorno"; alpine division "Cuneense"
III Corps: infantry divisions "Ravenna","Cuneo"
XV Corps: infantry divisions "Modena","Cosseria","Cremona"

3rd Army: permanent
controlling forces in peninsular italy as part of South Army Group at June 10, 1940

Practically destroyed in December 1942-January 1943 soviet offensive.
Back in Italy March 1943
Deployed along northeastern italian border in summer 1943 and still in reforming, it's crushed by germans at armistice

mmm...complicated:

an Italian Army should be formed by from 2 to 4 Corps; Army assets included one or more army artillery raggruppamenti, perhaps an AA artillery raggruppamento, a specialized engineer raggruppamento and a variable bulk of troops. It was often formed a Raggruppamento Celere d'Armata joining indipendent mobile regiments (Bersaglieri, Cavalry, armored...). Again, an army could include forces of Border Guard or Coastal.
The Logistic structure depended by situation (homeland, overseas, etc.)

However during WWII italian armies operated almost always with improvised OOB where is often difficult to find an order...

At september 1st, 1939 Italian Army had six permanent army commands (1st-6th). During winter 1939-40, other three (7th, 8th and 10th) had been formed for mobilization.
In fall 1940 were deactivated army commands 1st, 3rd, 7th, 8th and activated 9th and 11th.
10th Army was destroyed in February 1941
7th and 8th Army were reactivated in spring 1942
1st Army was reactivated in February 1943 and destroyed in May
6th Army was practically destroyed in August 1943
At september 8th, 1943 were active army commands 2nd, 4th, 5th, 7th, 8th, 9th, 11th

Other army level commands:
ACIT active in 1942
CTS active in first half 1942
Sardinia forces command active in 1943
ARMIR, Supersloda, Superalba, Supergrecia: alternate definition for 8th, 2nd, 9th and 11th Army in certain periods

Late, forgive my ignorance but what is an OB?

Oh God, practically by entire italian literature on WWII.

However I'd tell that Lucio Ceva "Storia delle Forze Armate in Italia" UTET 1999, collectes the largest part of them...
