Please I am searching infos, explanations about these roles :

Zollassistent

Hilfszollassistent

What are the same words in English or in French ?

What were exatctly their role in Kriegsmarine in 1944 ?

Zollassistent = Customs assistant
Hilfszollassistent = Auxiliary customs assistant

Those would be Customs personel ranks. To the best of my knowledge the KM does not hold those rank designations nor did they have a career path that involved customs. The only thing I could think of would be when they returned to port, Customs might have been waiting to see what the men brought home with them.
