Ave Benoit,

I really liked Enemy Submarine by Wolfgang Frank. Aside from Iron Coffins and Das Boot, it is the best U-boat book I have read. It primarily deals with Scapa Flow, but it also covers other voyages. The book ends on the eve of Priens last voyage.
