Of course the Wehrmacht wasn't updating it's records after May 1945. But WaST and the German Red Cross certainly did. And still is.

If there was such a surplus of food available after 1945 can someone explain to me why the UK had rationing until the 1950s? Flour for example was rationed until 1948.
