Probably my greatuncle Hans Knospler (Ironic) who was an EM in the Waffen-SS, a veteran of the Easter Front and died in the 90's.

I'd probably spend the day at the firing range and talking about the war.

narrow it down to ONE person
Karl Doenitz, as he was the last head of state of the German Reich constituional period, as well as a famous and respected naval commander. I'd probably have a simple lunch of U - Boat rations with Herr Doenitz on a former Kriegsmarine warship or U - Boat, out on deck. :D
